My first blog post and recipe is inspired by my sister Caitlin. First of all, she is a great big sister. Secondly, she is my personal photographer and takes all the pictures of me and my food.
She also inspired me to learn a new way of cooking. Caitlin has PCOS. Polycystic Ovarian Syndrome. That means her hormones are not regulated and her body is also insulin resistant.
All the natural sugars in food turn to fat and she can’t manage her weight. The Ketogenic Diet was her answer. She does not eat gluten or processed sugar.
The first recipe I want to share is Stuffed Zucchini Mushrooms. These are so delicious you would never know they are all natural and gluten free.
I am very lucky that my big sister helps me with my recovery, teaches me a delicious way to cook and is my best friend; THANK YOU CAITLIN!
